No Twitter and no wheels but Ansill Food + Wine is the first Philadelphia spot to get with the Korean taco trend. The bottom up fusion first came to prominence via a taco truck in Los Angeles and has already made its way to New York.
In Philadelphia, David Ansill’s Korean line cook Ann Miller has added shortrib and braised pork belly tacos with sweet and spicy Korean chili sauce to the Happy Hour (Tuesday through Saturday – 6 to 8 pm) menu. Get them for $5 each.

Surely, by now, you have heard of The Legend of The Korean Tacos, the foodie’s Great Depression 2.0 version of a Horatio Alger story. Since these Korean-Mexican hybrids first captured the hearts of their native Los Angeles, they’ve slowly but surely been spreading around the country, like some kind of bizarro Swine Flu that makes you happy as a lark, but strong like bull. Those of us who’ve been wondering when we may taste these fine creations for ourselves (sans travel) may wonder no longer: Ansill’s got ‘em, for just $5 a piece at happy hour (Tues-Sat, 6-8PM). Korean line cook Ann Miller’s take on this new-world source of deep goodness is made with either shortribs or braised pork belly, with sweet & spicy Korean chili sauce, and if the photo above of Miller’s work is anything to go by, we’re gone. It’s coming up on 6PM right… about… now.

No Need To Go To LA For Korean Tacos — Ansill Serves Them Now
The Korean BBQ taco craze that swept LA this spring has landed at Ansill. Inspired by the trend, Ann Miller, one of the line cooks at Ansill (who happens to be Korean), has been making short rib and braised pork belly tacos at Happy Hour for the past week. The tacos, which are topped with kimchi and spicy chili sauce, are $5 a piece — way, way less than the price of a ticket to LA. We haven’t had these, but if they’re even half as good as the Kogi truck tacos we had in LA, it’s pretty safe to say Ansill’s (already good) Happy Hour has made itself a dining destination.

Korea-style tacos, served off a truck, has become all the rage in New York, as the trend made its way east from L.A.
I don’t know of any trucks in Philly. Ansill in Queen Village, whose line cook Ann Miller is Korean American, does ‘em with shortribs or braised pork belly with sweet-and-spicy Korean chili sauce. They’re new on the happy-hour menu (6 to 8 p.m. Tuesdays through Saturdays) for $5 a pop.

UNDER THE TOQUE: Roman stays on course by not cutting corners

(May 11, 2009) Chip Roman’s love of cooking has been steady throughout his life. His love affair with working in restaurants, however, was a bit rockier. He jump-started his culinary career by working in two of Philadelphia’s highest-rated restaurants, Vetri and Le Bec-Fin. While working at Le Bec-Fin, he got formal culinary training and a business degree from Drexel University. However after years of toiling in the kitchen and in school, he was burned out on restaurants. That’s about when he was asked to help cater a party and was astonished at how much money a few hours of labor had earned him. He started a catering business, Charles Roman Catering, out of his home in 2004. The company soon outgrew his house, and he rented space in a friend’s restaurant in Conshohocken, Pa., outside of Philadelphia. When his friend’s place went out of business, Roman found he was ready to give restaurants another chance. He took over his friend’s lease and debuted Blackfish in 2006. The fine-dining restaurant has earned rave reviews and made Philadelphia Magazine’s Best of Philly lists in 2007 and 2008. Roman eventually opened another outpost of Blackfish in Avalon, N.J., which he is in the process of relocating a few miles away to a new spot in Stone Harbor, N.J.

CHILLED PEA SOUP FROM BLACKFISH STONE HARBOR
SUMMER SUPPER: Chip Roman’s chilled English pea soup
As we speak, the staff at Blackfish Stone Harbor is preparing to open for the frenzied summer season down the Shore. Chef and owner Chip Roman has taken over the former Henny’s Café waterfront space in the swank resort town, transformed by Stokes Architechture (Buddakan, Continental Midtown) into a 5,000 square foot restaurant seating 200. On Saturday, May 9 they will swing open their doors to lure the Lily Pulizter locals away from the fried flounder and broiled scallops that comprise standard Shore dining.
Like Blackfish in Conshohocken, Roman’s menu will play with progressive American dishes, and put the ample local produce and fresh seafood to good use. Think Cape May Salts oysters with carbonated Meyer lemon, watermelon and pink peppercorn for small plates; a bouillabaisse of seasonal fish with saffron broth, crusty bread and rouille for entrées. Lunch, dinner, Sunday brunch and late-night menus will be served. Accompanying the fare will be a speciality cocktail list featuring this year’s Philly-come-lately drink trend, vintage cocktails. Moore Brothers Wine Company has created a wine list emphasizing values from small, family operations in Europe and California.
