Marigold Kitchen Reveals a Look
at their New Spring Menu!
Marigold Kitchen co-chef/owners Andrew Kochan and Tim Lanza, along with chef Keith Krajewski are revealing a few dishes from their new spring menu!
Kochan and Lanza are known for keeping an element of surprise when presenting their 14 – 16 course feast. They prefer not to divulge the full menu in advance of their guests arrival. Each guest is asked about any food allergies or dislikes before dinner begins.
It’s actually more of a theatrical debut, and in that vein, Chefs Kochan, Lanza and Krajewski would like to offer a preview (or trailer, if you will) of what to expect on their new spring menu. And for those diners who come first to experience the premiere of the full menu, no spoilers please!
A Look at Marigold Kitchen’s Secret Spring Menu
14-16 new courses premiering Wednesday, April 1st…
A reversal of the traditional crunchy rolled cracker, this dish features achiote-carrots,
chipotle-pickled daikon, bibb lettuce, cilantro and mixed peppers rolled in rice paper
and served with avocado-lime gel and micro cilantro
This dish is a reinvention of iconic hummus, highlighting fresh soy beans and
lemongrass along with toasted black sesame seeds, chili oil and a puffed rice cracker
A course like no other, this cheese dish offers a creamy camembert paired with rhubarb
in multiple textures, macerated strawberries, walnut brittle and a lavender minute-sponge cake
“I am really excited about this menu, ” explains co-chef/owner Andrew Kochan. ” It’s so good to see blue skies and green growth and to be able to go outside without a jacket – that’s what this menu is to me. This is about expressing the freshness of a new spring and escaping an oppressive winter.”
